Last night I made a killer dinner (in more ways than one, actually). I felt a bit like white trash for some reason, even though they're not white trash dishes. I think it's because of the heavy use of Rice Krispies and Ritz crackers.
I made Rice Krispie chicken (I need to remember to post the recipe in![[info]](http://p-stat.livejournal.com/img/community.gif)
family_recipes at some point), my favorite potato casserole (which required the use of homemade cream of chicken soup), and fresh steamed broccoli. B had actually asked for fried chicken, but I hate making it because it's so incredibly messy. Besides, my monster cast iron skillet still is not seasoned. I compromised with the oven fried chicken and as soon as I mentioned Rice Krispies, he asked for Rice Krispie Treats (which I haven't made in years).
The broccoli came out the best I've done in ages, and I think a lot of it has to do with the pot I selected for it. I used our biggest skillet with a steamer basket and a glass lid. Being able to watch the broccoli made all the difference in the world, and the broccoli cooked very evenly because of the large surface area and not having to stack it as much as I would have in the sauce pan with a steamer.
All in all, it was an excellent meal, but I'm glad it's not one I do very often. Between the heart attack waiting to happen, the eleventyhundred calories consumed, and the mounds of dishes that didn't fit in the dishwasher, it's one of those meals that's best saved for special occasions. We normally just have B's parents over for Sunday dinners, but last night we were supposed to have one of B's friends and her daughter as well. Unfortunately, the little girl had a fever and they were unable to make it for dinner. Had they not been joining us, I doubt I'd have gone to all the trouble. I probably would have just made another Dream Dinners meal. It felt good to really cook, no matter how unhealthy it all was.
